They are really easy and we love them around here! <br /><br />Chicken Enchilada<br />Ingredients:flour tortillas (the small ones work well),red enchilada sauce, chicken (I usually boil it with taco seasoning and then shred it or cut it into bite-sized pieces), shredded cheddar cheese<br /><br />Then you just fill the tortilla shells with chicken (sometimes I add refried beans or rice, too) and place them in a casserole dish. Cover them with enchilada sauce and cheese and then bake at 350 for about 25-30 minutes. <br /><br />I know you love making freezer meals, and I just thought I'd share this one since it might freeze well.<br /><br />We had these a while back and I made 7-layer dip with it.<br /><br />7-Layer Dip<br />Ingredients:refried beans, sour cream, diced tomatoes, salsa, black olives, green onions, and cheese (I think you're supposed to add guacamole, too, but daddy doesn't like it so we have it on the side)<br /><br />Layer all the ingredients toghether and serve with tortilla chips. The order I do is beans, sour cream, salsa, tomatoes, cheese, green onion and black olives.<br /><br />I probably have some more I could send you if you like. Just let me know.
